Spicy African Peanut Soup

Spicy African Peanut Soup // Vegan, Gluten Free 

This is hands down my favorite soup, e v e r! It’s a recipe I adapted from Pinch of Yum

Why I love it: 

It’s super healthy. 

There are a bunch of nutrient dense foods in here, like sweet potatoes, kale, and turmeric. No dairy in this soup so my belly always feels great after!

It’s spicy.

Did you know that eating spicy foods actually can make you happy? The spiciness stimulates the part of our brains associated with pain, so our bodies release endorphins, the neurotransmitter that triggers a positive, happy feeling. 

It’s oh so easy to make.

I throw all the ingredients in the crockpot early on in the day and boom! Ready by dinner time! Plus it smells heavenly as it slowly simmers throughout the day. 

Recipe:

3 sweet potatoes

1-2 jalapeños

1 can of fire roasted tomatoes 

3 cloves garlic

1/2 red onion

Large handful of chopped unsalted peanuts

Curry and turmeric to taste (I probably do a good healthy tablespoon of each)

Couple pinches of Himalayan salt and pepper

2 cups water

14 ounces of coconut milk or almond-coconut blend

Cut the potatoes, onion, and jalapeños into chunks. Mince garlic. Combine all these ingredients in a crock pot on low for 6 hours, or until the sweet potatoes still hold their form, soft but not too soft. Then stir in 1/4 cup of organic peanut butter and 2-3 large handfuls of kale.
